White cabbage and cranberry salad

Today I’d like to share a salad recipe that is always a big hit among my guests. Aside from its good looks, it also tastes amazing! It is light, crisp and delicious. Here’s what you’ll need…

Ingredients

For the salad:

1/2 a head of white cabbage, thinly chopped (or if you have a food processor, throw it in there)

1/2 a bundle of parsley, finely chopped (you can add more or less, depending on your preference)

Some chopped green onion

A handful of dried cranberries

Finely chopped roasted almonds

 

For the dressing:

1/4 cup canola oil

1/4 cup rice wine vinegar (can be substituted with other types of vinegar as well)

Salt & Pepper

Some silan (date honey) and/or brown sugar

1 minced garlice

1/8 cup of orange or grapefruit juice (if you are using the juice from the actual fruit, throw in some pieces  to the salad, it is delicious!)
